Name origin
The name Polonée comes from the French word for “Polish,” derived from Polonais. The ending “née,” meaning “born,” reflects exactly what we are: a distillery proudly born from Polish heritage.
Our mission is to keep traditional Polish recipes alive and sharing the results with our customers who appreciate a good spirit.
Our spirit animal
Pheagle
Part Eagle, part Phoenix, put the two together and you get the Pheagle — a symbol of what we’re all about: taking old Polish traditional recipes and giving them a new life.
The Eagle comes from the Polish coat of arms and proudly represents our heritage and roots. The Phoenix, from Greek mythology, is famous for rising from its ashes and starting anew.

Equipment
Polish people have long been masters of crafting neutral spirits (“Spirytus”), the foundation for vodka and traditional fruit liqueurs known as nalewki. So when it came time to choose our distilling equipment, we figured it was best to go straight to the experts.
Our stills were built in Sieluń, a small town about 87 km north of Warsaw. Their modern, computer-controlled systems give us incredible precision and control throughout the distillation process.

Niagara is famous for its fruit, vineyards, and rich agricultural land — all things that happen to pair very well with distilling.
And if you’re going to revive centuries-old Polish recipes, it doesn’t hurt to do it somewhere surrounded by great fruit, good people, and a region that already knows a thing or two about making exceptional drinks.
